食谱:珊瑚焖伊面 Coral Braised E-Fu Noodles

材料
伊面 / 300克
银芽 / 20克
松菇 / 20克
鸡汤 / 450克
清油 / 少许
芫荽 / 少许

调味料:
麻油  / 少许
蚝油  / 40克
糖 / 10克
老抽 / 少许
花雕酒 / 少许

酱汁:
蟹肉 / 45克
蟹黄 / 40克
鸡蛋 / 1 粒
鸡汤 / 250克
鲜鸡汁 / 25克
姜汁 / 少许
芡水 / 少许
      
做法
1. 伊面先油炸再泡热水,可去除油质。
2. 炒香松菇后,就加入鸡汤和泡软的伊面一起煮。
3. 加些蚝油、糖、麻油、老抽和少许花雕酒调味,再加一些银芽,煮到收干汁,就捞起备用。
4. 把煮熟的蟹肉,浸泡姜汁和沸水去掉腥味。
5. 然后沥干,放入煮滚的鸡汤里,再勾个芡及加鲜鸡汁煮。
6. 把搅拌均匀的蟹黄和蛋黄也加在一起煮成酱汁。
7. 加些蛋白和花雕酒提味后,就把酱汁淋在伊面上。
8. 用芫荽作点缀就完成了 。

E-Fu Noodles / 300g
Bean Sprout / 20g
Pine mushrooms / 20g
Chicken Stock / 450g
Oil / Adequate
Coriander / Adequate

Seasoning :                
Sesame Oil / Adequate
Oyster Sauce / 40g
Sugar / 10g
Dark Soy Sauce / Adequate
Chinese Wine / Adequate

Sauce :
Crab Meat / 45g
Crab Roe / 40g
Egg  / 1 pcs
Chicken Stock / 250g
Concentrated Chicken Stock / 25g
Ginger Water / Adequate
Corn starch / Adequate


Method
1. Heat oil, fried E-Fu noodles and soak in hot water to remove the oiliness.
2. Cook mushrooms, add chicken stock and cooked E-Fu noodles. Season with oyster sauce, sugar, sesame oil, thick soy sauce and adequate chinese Wine.
3. Add bean sprout and cook until sauce dries up. Reserve noodles for later.
4. For sauce, soak cooked crab meat with ginger water and boiled water to remove the odor. 
5. Drain the crab meat and cook with chicken stock, thickening with mixture of cornstarch and water, add concentrated chicken stock and well mixed crab roe and egg yolk.
6. To enhance the flavor, add egg white and chinese wine.
7. To plate, put sauce on top of E-Fu noodles and garnish with some coriander.
