材料
午鱼 / 1公斤    
蛋 / 1个
鱼露 / 1汤匙

步骤
1. 午鱼买回来洗干净,放在冰格里,让鱼肉去水分(比如:早上10时放进去,下午6时就可以了)。
2. 把鱼肉斜刀切片。
3. 打个鸡蛋,加鱼露拌匀。倒入鱼肉,双手捞均匀,腌一个小时,就可以炒了。
4. 炒鱼肉时,火要大。切忌翻搅太多,以保留鱼肉完整。


Ingredients:
Threadfin / 1kg
Egg / 1pc
Fish sauce / 1 tbsp

Method:
1. Wash the fish and place it in freezer to remove moisture (e.g. : You can freeze it at 10am, and take it out from the freezer at 6pm).
2. Cut fish into diagonal slices.
3. Whisk egg and add fish sauce. Stir evenly. Add fish meat, mix evenly with both hands. Marinate for an hour, and stir fry.
4. Stir fry with big fire. Do not overdo the stirring, to keep meat intact.
